Irish Cream/Coffee-Choc/Cocktail/Hunter’s Chicken Pancakes

It was about time I posted something new on here, what better excuse than Pancake Day. I didn’t want to just repeat what I’ve tried previously, so thought I’d test out some new ideas this year. I’m pleased to say I was able to try out four of the five I came up with this year, though I may still use that fifth another time….

First of all, for those who might find it useful, here’s the recipe I followed. It’s from an old recipe book that my mum has had for years, now preserved with plastic sleeves.

Irish Cream Pancake
My first attempt at an alcoholic pancake – I mixed in some Irish Meadow (similar to Baileys) with the batter for this one, after it was suggested by a friend. It turned out nice, would definitely try it again. No additional filling was needed.

Coffee-Choc Pancake
This turned out nice too, but (bearing in mind it was a first attempt at this) it just didn’t turn out overly photogenic! I took a spoonful of coffee granules and blended them up with just a little milk, then added this to the batter. Once made, I then used some chocolate syrup as a filling.

Cocktail ‘Blob’ Pancake
Another alcoholic attempt, it was a bit of a gamble as I wasn’t certain that it would turn out right. I added cocktail favourites grenadine and blue curacao to this one, dripped in using a straw (with my thumb over one end to create a vacuum, released over the batter). Ideally, it’s a two-person job; one person holds the pan and pours the batter in, whilst the other then drips the drinks in as soon as the batter hits the pan – any later and it won’t mix with the batter. It looked odd at first (as expected/hoped) but it turned out great. A cocktail you can eat.

Hunter’s Chicken Pancake
I can never resist twisting the classic Hunter’s Chicken recipe into new ideas, and thought I’d use that as my first attempt at a savoury pancake. Tried this one a couple of days after Pancake Day, cooking for friends – a friend had made the batter, and by sheer fluke I managed to create decent American-style pancakes on the first attempt. I laid on some cooked chicken, some bacon I had just fried and then poured on some Jack Daniel’s Honey barbecue sauce, before folding the pancake, taco-style. These tasted great and were enjoyed by all.

Banana Cocktail Cubes

New ‘nana kicks

Continuing my experiments with amateur mixology, and my love for all things banana-flavoured, this is one of the ideas I wanted to try after managing to find a moderately-priced banana liqueur.

I used:

Banana juice
Creme De Bananes
Grenadine
Vimto
Pineapple juice (optional)

First, mix one part creme de bananes to two parts banana juice, to ensure that it will freeze, then pour carefully into an ice cube tray.

Mix two parts grenadine (for the consistency) and one part Vimto (to give it a slightly darker colour), then drip a little carefully into each compartment using a straw. I think they almost resembled mini Rorschach tests….

Leave to freeze overnight for 24 hours, and they’ll look like this….

Being a first attempt at this one, I wasn’t 100% sure at the time if they’d freeze properly, but it worked with some careful prising, and they looked exactly how I wanted.

They taste great on their own, but I also tried a couple in some pineapple juice.

Popcorn & Banana Tic Tac Vodka

….made with Minions!!

Here’s one I’ve been meaning to post up for a little while, now finally online in time for ‘National Vodka Day’ (seriously though, who makes these days??) – popcorn and banana flavoured vodka, made using Tic Tacs. The latter was made using Minion Tic Tacs – their sacrifice shall not be in vain!

For the popcorn-flavoured vodka, I poured one container’s worth of Tic Tacs into the bottle, then just a little extra from another container, then allowed to brew.

Around 90 minutes later, it looked like this….

Then the following day, it looked like this….

To play it safe, I decided to allow it to brew for another day, then moved on to the next one.

For the banana-flavoured vodka, I added about half of a large container, equivalent of a regular sized one. A little less may have sufficed, as it left more to filter out, but it was still worth it.

I ended up having bits of Minion floating around….

A few days later, both had the right scent – just needed to be filtered and taste-tested.

Given that this was my first attempt at flavouring vodka, I was quite pleased with how they turned out, having tasted both. Still need to try these out on friends, hope they’re ready….

Cocktail Ice Cubes

A Sunrise in ice….

With summer coming in strong, I wanted to create something in the cocktail vein that would also help keep things a little cooler.

I used:
Echo Falls’ peach & mango wine
Pineapple juice
Orange juice
Grenadine
Bitter Lemon (optional)
Blue Curacao-injected grapes (optional)

I took a mixing jug and poured in one part wine to three parts pineapple juice (to ensure it froze properly), then added a dash of orange juice. I then poured it carefully into an ice tray, dripped in some grenadine into one half of the cubes with a straw, then placed in the freezer.

Around 90 minutes into freezing time, I then took the tray out and dripped in some grenadine into the remaining cubes, so that they looked like this….

Thought I’d see if I could get a marbled effect. I then placed them back into the freezer, to remain there overnight.

This was the end result.

To serve, I poured a glass of bitter lemon, added a couple of cubes and also threw in a couple of grapes that I had injected with blue curacao.

I was quite pleased with the result, both visually and taste-wise, and may play with the idea again in the future.

The ‘Pokeball’ Shot

Gotta shoot ’em all!

Inspired by the current ‘Pokemon Go’ hysteria that everyone’s into, I give you my latest cartoon-inspired shot – a ‘Pokeball’. Whilst the game itself might appeal to all ages, this one is strictly for the adults.

Just add a dash of grenadine to a shot of white chocolate liqueur, and it’s done.

Summer JD Cocktail (version 2)

For World Cocktail Day 2016

This evening I discovered that it was in fact ‘World Cocktail Day’, via Twitter – well, who am I to argue? I decided to try putting something together, using what I already had in stock, and this was the result.

In this order:
A shot of Cococabana coconut rum
Tropical juice
A dash of Honey Jack Daniel’s
A couple of grapes injected with grenadine, with a little more grenadine added on top

Considering it was completely improvised on the spot, I couldn’t have been happier with this, it tastes great.

As an aside , this is worth trying in itself – grapes injected with grenadine and Blue Curacao. This is something I first tried last year, and occasionally add to cocktails as a result.

Bakewell Tart shot

For National Amaretto Day

I heard that it was National Amaretto Day today via Twitter, so thought I’d share this quick and simple one today – a ‘Bakewell Tart Shot’, created to taste just like the popular cherry-topped tart.

Simply pour a shot of Disaronno Amaretto into a glass, and add a dash of Grenadine. Combining the almond and raspberry flavours, you’ll notice the similarity. Cherry optional!
